Bear garlic pesto

Do you smell that? It’s one of the first foods that indicates that the spring is finally here: bear garlic. Right now it’s in season and if you’re lucky and know your spots you can find it in the “wilderness” of your hometown (be careful not to confuse it with poisonous lily of the valley). Otherwise you will also find it at your local supermarket. There are some great things that you can do with it. One of our favourites is pesto!

Ingredients:
  • 100g fresh bear garlic
  • 40g parmesan cheese
  • 1 1/2 handfull almonds
  • 5-6 tablespoons olive oil
  • salt
  • cracked pepper

Add all ingredients to a food processor and mix them until you have the favored consistency. You can go more or less crunchy, all up to your liking.

What is great about this recipe is, that you can change it up: You could take walnuts or pine nuts instead of almonds, or use basil instead of the bear garlic.

Stored in an air tight container it will remain fresh at least a week.

Serve with pasta, as a spread on bread or with vegetables… Always keep in mind though who you want to see the rest of the day, as you might get some responses to certain garlicy smells…
