Apple Cheesecake with caramel sauce

These days I’m traveling a lot from A to B and I’m not home too many days in a row. What happens to my fridge is that there are several packages open, apples I should eat and hungry roomies. I thought about how to combine all these ingredients to some delicious sweet snack for the afternoon coffee break. As one of my flatmates and I were brainstorming we came up with the idea of an apple cheesecake.

There are five different steps and you’ll find the ingredients for each step seperatly. Don’t be afraid of all the ingredients. I know it seems a lot but the result will be stunning!

Short crust
  • 115g flour
  • 50g brown sugar
  • 100g butter (soft)
Curd cream cheese
  • 500g curd
  • 200g cream cheese
  • 2 eggs
  • a little bit of lemon peel
Apple topping
  • 3 apples (300g peeled)
  • 100g sugar
  • 25g cinnamon
  • a little bit of lemon peel
Crumble
  • 150g brown sugar
  • 75g flour
  • 50 oats
  • 75g butter (soft)
  • almonds (minced, planed,..)
Caramel sauce
  • 100g sugar
  • 30ml water
  • 100g cream

So how do you create this sugar bomb?

  1. First of all, you’ll have to make the short crust by mixing up all the ingredients.
  2. Then fill a small baking tray with tin foil and spread out the mass evenly.
  3. Bake for about 15 minutes at 180 degrees (circulating air).
  4. Meanwhile prepare the curd cream cheese mass. Mix the curd with the cream cheese until it’s smooth. Then add the eggs, the sugar and the lemon peel.
  5. When this is ready, prepare the apple topping by rasping the apples and mixing the rasped apples with sugar, cinnamon and lemon.
  6. Now the short crust should be done and you can take it out of the oven. Place the short crust in the fridge and let it cool down a little bit.
  7. Then place the curd cream cheese mass on it and add the apple topping.
  8. In the end, you have to make the crumble by mixing brown sugar, flour, oats, butter and almonds. I like to do it with my hands because the butter gets warmer and it’s easier to make a good crumble.
  9. Put the crumble on top of the apples. Now your cake is ready to be put in the oven again at the same temperature for about 40 minutes.

When your cake is done and out of the oven,  you can make the caramel sauce.

  1. Put water and sugar in a pot and heat it up (no hotter than 190-200 degrees) and don’t forget to stir.
  2. Wait until it got some color and then take it from the stove and add the cream.
  3. Now heat it up again until it has the texture that you like.
  4. You can either put the cream on the cake or place it next to it so everybody that likes to have some can serve oneself.
